On May 1st, the hospital employees celebrated Labour Day with a celebration, gathering at the tennis court on the Galmi compound. The preparations started early (7am) for the 6pm meal. There was much cutting and peeling of onions, garlic, tomatoes, etc.
The 4 rams were slaughtered, and placed on spits, and roasted. (the meat was divided up and given to employees at the meal). The "choicest" meat from inside the animals (use your imagination) was put into the sauce which was served over rice, noodles, or couscous.
